There are olive trees in Palestine which probably date back to the beginning of the Christian era and it was an olive branch that Noah's dove brought back to the Ark. Leading olive-producing nations of the world are those which border the Mediterranean. Fresh unprocessed olives are inedible because of their extreme bitterness. Olives are grown mainly for the production of olive oil, the highest grade of oil being called virgin, sublime, or 1st-expressed oil. This is the oil that comes out of the pulp of an olive that has been picked just after it has ripened but before it turns black. Olive oil is one of the most digestible of the edible fats.
