"The epicurean's delight," parsley is used fresh or dried. It is an excellent source of vitamins A and C (it has 3 times as much as oranges), and is rich in minerals (it has twice as much iron as spinach). In ancient Rome, sprigs of parsley were passed around during funeral orations and nibbled on by the audience.
