There are hundreds of varieties of peppers and the smallest ones are usually the hottest. Green peppers turn red when ripe and are a very good source of vitamins C, A, and B. Spanish pepper is known as pimiento, and the mild red pepper of Hungary is called paprika. Buy firm, unblemished peppers and refrigerate until they are ready to be used. The big bell peppers can be stuffed or sliced for salads; the hotter varieties, also known as chili peppers, are used in a wide range of Mexican dishes. Be careful handling them; the substance that makes them hot can irritate the eyes if it comes into contact with them.
