Pumpkins are a member of the squash family and were a staple in the American Indian diet. They usually appear on the market in October, tapering off in November. Everyone has heard of pumpkin pie, but cream of pumpkin soup is delicious, with a fresh, delicate taste, and pumpkin bread, made with a puree of this versatile vegetable, deserves wider attention. And, as a bonus, pumpkin seeds are very good raw or roasted and salted. The pumpkin is a good source of vitamin A, and a fair source of C and energy.
