Information about Vegetables: Spinach

About spinach, information about the vegetable, production, history and varieties in the world.

Widely grown in northern Europe and the U.S. (Texas and California being the big producers), this intensely green vegetable is well known for its high iron and vitamin A and C content, and is also an important source of folic acid, one of the B vitamins. Try cooking spinach in only the water which adheres to the leaves after it is washed, or better yet, use it raw in a salad with avocado and parsley.
