Use in the Body: It is the main ingredient of lecithin, which aids in the movement of fats from the liver to the cells. Plays a part in the transmission of nerve impulses.

Notes: Not greatly affected by heat or storage, but destroyed by strong alkali. Present in all living cells, it is made by the body from the amino acid methionine, along with folic acid and vitamin B12.

Best Sources: Eggs, organ meats, wheat germ and whole grains, legumes (peas, beans, lentils, peanuts), fish.
