Vitamin D

Use in the Body: Regulates amount of calcium and phosphorus in the blood, thus it is necessary for bone development.

Deficiency May Lead to: Faulty development of bones and teeth, tooth cavities, rickets, tetany--muscular numbness, tingling, and spasms.

Overdose May Lead to: Excess of calcium in the blood and tissues.

Notes: Can be formed in the body when the ultraviolet rays of the sun activate a form of cholesterol in the skin, but the sun's action is inhibited by air pollution, clouds, window glass, and clothing. Primarily stored in the liver. Very stable in relation to heat, aging, and storage and relatively stable when exposed to air.

Best Sources: Sunlight, fish liver oil, egg yolks, organ meats, fortified milk and milk products, fatty fishes.
