Use in the Body: Appears to be an antioxidant that prevents oxidation of saturated fats in the blood, thus heading off such diseases as atherosclerosis. Related closely to vitamin E. May prevent certain kinds of cancer.

Deficiency May Lead to: Difficulties in handling vitamin E. Extra amounts of this vitamin may relieve selenium deficiency.

Overdose May Lead to: Toxicity. Excessive selenium may replace sulfur in tissues, resulting in brittle hair and bones.

Notes: An essential trace element, selenium is still a mystery to researchers. It may increase the incidence of dental cavities or, on the other hand, it may prevent muscular dystrophy.

Best Sources: Nuts and seafood. Also grains and cereals, green leafy vegetables, fruits, organ meats, condiments and spices, milk.
